I have become a real big fan of Mother earth News.I read another article about the nutritional benefits of lard and fats from grass-fed pigs earlier which was a real eye opener. That explains why The Vikings to present day Sweden find pork so important part of our diet. It gives us supplements that we don’t get from the sun during our dark winters. I have been looking for a recipe on how to render lard. We buy a half a pig every year. Now I can render fat for myself. We usually put it out for the wild birds during the winter time.
